Quiche Lorraine Recipe

This quiche lorraine recipe will make you the classic of all French quiches. It is made with cream, eggs and bacon. A good quiche Lorraine will please everyone at your table. It is so simple, honest and good!
Serve it hot or cold. With a salad for lunch or a good supper dish. It makes an equally good starter.
This recipe will serve 4 - 5 people
Ingredients
• An 8ins partially cooked pastry shell. You can easily make your own at home! It's really not as difficult as you may think. Please go to

• 4 oz lean thick bacon cut into small pieces• 3 eggs or 2 eggs plus 2 egg yolks • 1/2 pint ( 1 1/4 cups) single cream • Salt and pepper and a little nutmeg to taste.
Method
• Prepare the oven by preheating to 400F or Gas 6 or 200C
• Prepare the filling for the partly cooked pastry shell. • Cook the bacon pieces in a heavy bottomed frying pan for about one minute. • Place the bacon in the pastry case. • Beat eggs slightly. • Stir in cream and salt, pepper and nutmeg. • Pour the egg mixture over the bacon in the pastry shell. • Place on a baking tray in the preheated oven and bake for 25 - 30 minutes or until golden brown, puffy and set.
Serve with a
green salad
French bread, a glass of French white wine or a Rose wine. Can be served hot or cold.
