Traditionally pates were made in an oval earthenware dish with straight sides and the lid had a hole in it. But you can use any ovenproof dish and if it has no lid, just cover with a piece of foil while it is baking! I often use a bread tin, this is very useful.

Quite often the dishes are lined with bacon. Unsmoked or mild bacon is stretched with a knife until it is very thin and then used to line the dish.
Cooking the Pate
The casserole dish is placed in a baking tin filled with hot water which reaches half way up the dish. This is called 'au bain-marie' or simply a water bath.
Keeping your Pate
Once cooked your pate will keep for at least a week in the refrigerator. It is always better to keep it for about 3 days before using for it to 'mature'. Then take it out of the refrigerator about an hour before using. This is great if you are preparing for a party as you can make if a few days ahead of time!
Serving Your Pate
Your delicious home made pate can be served for a formal meal as a starter. It can be sliced in thick slices. It can be left in the dish for people to help themselves with a spoon. Serve with hot thin toast or crusty French bread with butter if you like.
Your pate can also be sliced and served with a green salad for a light lunch or family supper. Wonderful!
