I am not saying that it will be as good as what you would buy in France as the French are passionate about their bread and they would be quick to say that no bread is as good as the bread in France. The main difference in French bread is the flour they use. The flour is from a particular type of wheat, unbleached, light flour, very fine and free flowing. If you cannot get French plain bread flour, then use a good quality strong bread flour instead. I just use a good quality bread flour and have no problems. However, there are some other factors to take into consideration. I live in the United kingdom and ok, it's not the coldest place on earth but it's not always the warmest either. So, basically what I am saying here is that I get better results in the summer than I do in the winter due to the temperature in my kitchen! The temperature effects the dough rising, so you need to have a warm room for the best results. The baguette is the classic of all French bread, crisp on the outside and a good texture on the inside.
