Algerian Fish Cakes

This fish cake recipe will give you the best fish cakes you have ever tasted and they are so easy to make at home.

The French have a great influence in Algerian cooking and these little gems have the most wonderful flavours of the spices used in this cooking.

They are great for any day of the week for family meals or would make an excellent option for entertaining as they are sensational.



Ingredients

• 175g (6oz) chopped onion

• Salt

• 100g (4oz) breadcrumbs

• 150mls (1/4 pint) milk

• 3 eggs

• 675 (1 1/2 lbs) fresh white fish such as haddock, cod, whiting etc

• Black pepper

• 1/4 teaspoon ground cinnamon

• 1/4 teaspoon ground cloves

• Flour for dusting

• Butter and olive oil for frying




Method

• Sprinkle the onions with salt and leave aside for half an hour

• Soak the breadcrumbs in the milk for about 10 minutes then squeeze them until most of the milk has gone

• Beat the eggs and add this to the breadcrumb mixture

• Chop the fish and the onions very finely, you can use your food processor here for convenience.

• Season with the cinnamon, cloves and black pepper.

• Leave the mixture in the refrigerator for half an hour.

• Finally, form the mixture into round cakes and dust with flour.

• Fry them gently in the butter and oil until golden brown.

• Serve with a tomato sauce or with a fresh green salad
