A cool cucumber salad recipe is easy and a lovely addition to your hors-d oeuvres table. The green of the cucumbers is so refreshing and a tasty nutritious salad to include with your starters. What could be more simple to make than this beautiful dish of cool summer cucumbers. It will give your table a wonderful display of colour for special occasions or every day meals.
Ingredients
• 1 whole cucumber • 1 Tablespoon parsley, freshly chopped • Salt • Vinaigrette dressing - you will find the recipe here for your

Method
• The cucumber is usually peeled in France but you can leave the peel on if you prefer. • Slice the cucumber into the thinnest slices you can. A mandoline is used for this in France or you can use the wonderful attachments you now have with your food processors. • Place the sliced cucumber on a large plate and sprinkle with salt. • Place another plate on the top of them and put a weight on top of this. • Leave for about an hour. • Drain off the liquid and wash the cucumber in a sieve under cold running water, then dry it. • Sprinkle with parsley and the vinaigrette.
Your cucumber salad is now ready to serve. It is usually presented in an individual dish but I have often put it with the tomato salad (as in the picture below) as the colours together are so pretty and appetising. Just another quick and easy salad recipe to add to your favourite appetizers or starters for all your family and friends.
