Carrot Salad Recipe

A delicious carrot salad recipe which can be served as part of your hors d oeuvres. It will add such a beautiful colourful display for your table and give your family and friends a healthy taster.
This will serve six people
Ingredients
• 1 lb (45gm) carrots • Salt and ground black pepper to taste • Vinaigrette aux fines herbes (please see hors d oeuvres page for French dressings)
Method
• Peel and grate the carrots. • Season well and mix with the dressing.
Note
If you do not have the herbs for the vinaigrette aux fines herbs, you can use parsley instead.
This salad is beautiful when served on a plain white dish which brings out the bright orange colour and along with the other colours of your salad table will be a real show stopper. They not only look incredible, they taste incredible and are so wonderfully healthy too. Even the kids will love their veg now!
