Clafoutis aux Mures



Blackberry dessert or Clafoutis



This is a blackberry dessert which in France is called a 'clafouti aux mures' and is a very simple dessert for family meals.

It has it's origins in peasant cooking as the ingredients are very much what was in season and used accordingly. It is however a very tasty and 'so good for you' family dessert that you will want to make it time and time again.

It is often made with cherries but this one is for blackberries as I was enjoying myself picking fresh blackberries recently. It is also a very versatile dish and although cherries are traditional in France or indeed apples, pears or plums can be used with just as good a result.

Ingredients

• 3 cups blackberries , washed and stalks removed.

Batter

• 1 1/4 cups milk (275g, 6oz)

• 1/3 cup sugar (50g, 2oz)

• 3 fresh eggs

• 1 tablespoon vanilla extract

• 1/2 cup flour (70g, 2 1/2oz)

• 1/4 teaspoon salt

Method

Pre-heat your oven to 350 F (177C, Gas 3)

• You can use a blender if preferred and if you choose this method, simply place all the ingredients for the batter in your blender on top speed for about one minute.

• Otherwise, place your flour, sugar and salt into a bowl and beat in the eggs one at a time. I use a balloon whisk but you can use a wooden spoon. Then gradually beat in the other liquids.

• Lightly butter an oven proof dish about 1 1/2 ins deep and place the blackberries in the dish.

• Pour the batter mixture over the blackberries and place in the pre-heated oven.

• Bake for about one hour or until the flan is golden brown.

It will have risen and puffed up but will go down again so this is normal!

Serve warm with some powdered sugar sprinkled on it and if you are feeling very naughty, a little cream or creme fraiche too!

Wonderfully warming and satisfying!
